Coconut Yogurt

Coconut Yogurt

The yogurt trend has been on the up and coming over the past few years. Luckily, you can easily make a dairy free version as well! Sometimes these specialty foods are hard to come by so making it at home is a delicious and easy solution. Try topping it with our Paleo granola recipe and a few fresh berries.

Ingredients

1 Can full fat coconut
1 Capsule probiotic
1 Jar or glass with a lid

Directions

  1. Refrigerate the can of coconut milk over night. The fat will come to the top and separate from the water. You can save the water, use the whole can, or just use the cream. If you discard the water you will get thicker yogurt.
  2. Open the probiotic capsule and combine the ingredient with the coconut milk and stir.
  3. Put the lid on the container of choice. A mason jar works well.
  4. Place the mixture in the oven with the light on for 24 hours. DO NOT TURN THE OVEN ON. this will create enough heat to incubate the live cultures from the probiotics to create the yogurt.

    Sounds yummy
    At the moment I am required to not eat canned food. Is there an alternative or is canned coconut milk okay?
