Jalapeño Avocado Chicken Sliders

The Super Bowl may be over, but there is still nothing better than a party with family, friends, and sliders! These have a touch of heat from the pepper and creamy texture from the avocado. Enjoy as sliders on gluten free buns or make mini meatballs for the whole team to enjoy!

Servings: 6 Burgers

Ingredients
1 lb ground chicken
1 ripe avocado
1 jalapeño
1 tbsp coconut oil
1 tsp salt
1 tsp pepper
6 slices cheddar cheese (optional)

Directions

  1. Dice the avocado into small cubes. Cut the jalapeño into dime-sized pieces.
  2. Add the avocado, jalapeño, salt, and pepper to the ground chicken and stir together gently as to not smash the avocado while still combining well.
  3. Divide the mixture into 4 equal parts.
  4. If you’d like you can add one small slice of cheese (which I folded in fours to fit inside the burger) to the middle of the meat mixture.
  5. Heat your pan to medium heat and add the coconut oil.
  6. Once the pan is hot, add the burger patties and cook for 12-14 minutes on each side, or grill for about 6-8 minutes on each side. The internal temperature of the chicken should hold steady at 165°F for a minute when finished.
