Caramelized Banana Protein Mug Cake

Hey all you sweet tooth-ers! Being gluten free doesn’t have to mean giving up sweet treats–like cake! This “mug cake,” named for being made in a mug, is gluten, dairy, and soy free. Indulge in this sweet treat without worrying about any heavy sugars or unwanted additives. Life is sweet when it’s simple.

Ingredients

½ banana, sliced
1 tsp coconut oil
1 tbsp chocolate vegan protein powder
2 tbsp coconut flour
1 tsp unsweetened cocoa
1 tbsp honey
¼ cup coconut milk
¼ tsp baking powder
1 egg
1 tbsp dairy-free chocolate chips

Directions

  1. Add the coconut oil to a pan and bring to medium heat while it melts.
  2. Add the banana slices and cook for about 2 minutes on each side or until nice and golden.
  3. Drizzle the bananas in half of the honey and reserve the rest for later. Set them aside.
  4. Combine the protein powder, cocoa, coconut flour, and baking powder in a microwave-safe bowl or mug (hence “mug cake”).
  5. Add the coconut milk and the rest of the honey. Stir well.
  6. Add the egg and whisk until smooth.
  7. Fold in the chocolate chips.
  8. Microwave for 3 minutes.
  9. Top with the banana slices and a little drizzle of honey.
