Bamboo Chicken

Bamboo Chicken

This Bamboo Chicken dish was inspired by Eastern spices and flavors found in my kitchen. Chicken is one of the most versatile proteins, and takes on marinades very well. The fresh veggies, and of course the bamboo shoots bring life and crispness to an easy and fun dinner time meal. With simple preparations, this dinner comes to life!

Bamboo Chicken
Servings:4

6 chicken breasts, diced
1 can bamboo shoots, drained
1 bunch scallions, diced
1 green bell pepper
1 Tablespoon cornstarch
1 Tablespoon red wine vinegar
2 Tablespoons rice wine vinegar
4 Tablespoons coconut amino acids
1 Tablespoon freshly chopped ginger

Directions:

  1. Dice the chicken into bite-sized pieces.
  2. Combine coconut amino acids with cornstarch to the diced chicken. Stir everything together to let marinade. Be sure to stir every couple of hours and mix the flavors. A 24-hour marinade is ideal, but at least 3 hours will do the trick.
  3. Chop the scallions, ginger and green bell pepper. All should be minced except for the bell pepper to preserve the crispness. Dice the bell peppers into bite size pieces.
  4. Cook the chicken to completion and add all other ingredients.
  5. Continue to cook for another 5 minutes until all flavors are combined.
