Pork Chops with Apple, Onion & Bacon

Pork is sometimes referred to as “the other white meat” and nutritionally comparable to chicken. That being said, a change from chicken is always welcome in everyone’s diet! The best part? Pork chops are packed with vitamins B6 and B12. These two key vitamins help decrease homocysteine – the known blood marker for inflammation. Enjoy this paleo pork chop meal!

Pork Chops With Apple, Onion & Bacon
Servings:4

Ingredients
4 4oz boneless pork chops (organic and antibiotic free)
3 tbsp olive oil
½ tsp sea salt
½ tsp freshly ground black pepper
1 tbsp fresh thyme
1 medium onion, peeled and cut into wedges
2 medium Granny Smith Apples, peeled, cored and cut into 8 wedges
4 ounces sliced bacon, cut into bite-size pieces

Directions>

  1. Preheat oven to 425°F.
  2. Add two tablespoons of the olive oil to a pan and heat on medium-high.
  3. Season each side of the pork chops with salt and pepper.
  4. Add the pork chops to the hot pan and brown the outsides (about 2-3 minutes each side).
  5. Remove the pork from the heat.
  6. Add the remaining oil and ingredients to the pan. Toss everything together and cook for a minute or two to blend flavors.
  7. Add the fruit and vegetables to a glass or cast iron pan and bake for 25 minutes.
  8. Add the pork to the glass or cast iron pan along with all the other ingredients and bake for another 10 minutes.
